Step-By-Step Paneer Masala Recipe with Chukde Spices

For Masala Preparation:
- Paneer
- Ghee – ½ cup
- Chukde sabut dhania – 1 tbsp
- Chukde Cinnamon stick – 1
- Chukde Moti Elaichi – 1
- Chukde Tej Patta – 1
- Chukde sabut jeera – 1 tsp
- Chukde laung– 2
- Green elaichi– 1
- Fennel seeds – 1 tsp
- Methi seeds – ½ tsp
- Red chilli – 3
- Melon seeds – 1 tbsp
- Cashews – 3
- Black pepper – 3
- Javitri – 1
- Turmeric powder – 1 tsp
For Gravy:
- Curd – 1 cup
- Chukde Haldi powder – 1 tsp
- Chukde Dhania powder – 1 tsp
- Chukde Red chilli powder – 1 tsp
- Kashmiri Lal Mirch powder – 1 tsp
- Chukde Garam Masala – 1 tsp
- Salt to taste
For Tadka:
- Oil – 2 tbsp
- Kalonji – ½ tsp
- Chukde Coriander seeds – 1 tsp
- Chukde Tej Patta – 1
- Onion – 3 (finely chopped)
- Tomato – 2 (finely chopped)
- Green chilli – 2
- Ginger garlic paste – 1 tbsp
- Hot water – 1 cup
- Coriander leaves – a handful
- Chukde Kasoori Methi – 1 tsp
Preparation

Make the Masala Powder
- Dry roast coriander seeds, cinnamon, moti elaichi, tej patta, cumin, cloves, cardamom, fennel, fenugreek, red chilli, melon seeds, cashews, black pepper, and javitri.
- Blend into a fine powder with turmeric.

Prepare the Gravy Base
- In a bowl, mix curd, haldi, dhania powder, red chilli, Kashmiri lal mirch, garam masala, and salt.

Cook the Curry
- Heat oil, add kalonji, coriander seeds, and tej patta.
- Add onions and cook until golden.
- Add ginger-garlic paste, then chopped tomatoes and green chillies. Cook well.
- Add the curd mixture, followed by hot water.
- Stir in the masala powder prepared earlier.

Finish the Dish
- Add paneer cubes, kasoori methi, and coriander leaves.
- Simmer for a few minutes until everything blends well.
