When you’re craving something quick, comforting, and wholesome, this Veg Soya Pulao is a perfect choice. It’s light on the stomach, filling, and comes together without much effort—ideal for busy lunches or relaxed dinners.

Start by soaking the soya chunks in hot water for 5 minutes. Once soft, squeeze out all the excess water properly to remove any raw smell. Transfer the soya to a bowl and add thick curd, haldi, laal mirch, and salt. Mix well and let it rest for 10 minutes. This small step makes a big difference to the final taste.

Heat ghee in a pressure cooker. Add jeera and whole spices and let them crackle. Add sliced onions and cook until they turn golden. Now add tomatoes and capsicum, followed by turmeric, dhania powder, red chilli powder, garam masala, and salt. Roast the masala well for 3–4 minutes until aromatic and slightly glossy.

Add the marinated soya chunks and cook for another 2 minutes so they absorb the masala. Now add soaked rice, water, green chilli, ginger, lemon slice, fresh coriander, and mint. Mix gently, close the lid, and pressure cook for 2 whistles.

Once the pressure releases, fluff the pulao lightly and serve hot with curd or raita. Simple, comforting, and packed with flavour.

Ingredients

For Soya Marination

  • 1 cup soya chunks
  • ¼ cup thick curd
  • ¼ tsp haldi
  • ½ tsp red chilli powder
  • Salt to taste

For Pulao

  • 1 cup rice (washed and soaked)
  • 1 cup water
  • 1 tbsp ghee
  • 1 tsp jeera
  • Whole spices: cinnamon ceylon, tej patta, chakri phool, badi elaichi, laung
  • 2 onions (sliced)
  • 1 tomato (chopped)
  • ¼ cup capsicum (chopped)
  • ½ tsp haldi
  • 1 tsp dhania powder
  • 1 tsp red chilli powder
  • 1 tsp garam masala
  • Salt to taste
  • Green chilli (slit)
  • Ginger (julienned or chopped)
  • Lemon slice
  • Fresh coriander & mint
