  • Soak the urad dal and blend it with 2 tablespoons of yogurt to make a smooth paste.
  • In a mixing bowl, combine suji, maida, aata, ajwain, hing, and kalaunji. Add the dal paste and knead into a soft dough. Set aside for a few minutes.

Prepare the Aloo Sabji:

  • Heat oil in a pan. Add jeera, sauf, dhaniya, red chili powder, and whole spices (sabit mirch, tej patta).
  • Add the boiled and mashed aloo to this mix, stir, and cook with salt, haldi, dhaniya, and mirch.
  • Once the potatoes are well mixed with the spices, add water to form a gravy-like consistency. Let it simmer until the flavors blend well.
  • Add kasuri methi, garam masala, and Kashmiri mirch for that rich color and aroma.

Fry the Kachoris:

Roll out small portions of dough into kachoris and fry them in hot oil. Ensure they puff up beautifully, then reduce the heat to allow them to crisp up.

Serve:
