Ingredients:
For Marination:
- Chicken (cut into pieces) - 700g
- Ginger garlic paste - 1 Tbsp

- Lemon juice - 3/2 Tsp
For Dry Roasting Spices:
- Cumin seeds - 1 Tsp
- 6 Cloves
- 4 Dry red chillies
- 5 elaichi
- 8 Black pepper
- 1/2 Cinnamon stick (Dal chini)
For Cooking:
- Mustard oil - 1/4 cup
- 2.5 Onions (chopped)
- Ginger garlic paste - 1 Tbsp
- Turmeric powder - 1/2 Tsp
- Fennel powder - 1/2 Tsp
- Chukde Chicken curry masala - 1.5 Tbsp
- Degi mirch (red chili powder) - 2 Tsp
- Besan (gram flour) - 2 Tsp
- Tomato puree - 450 ml
- 4 Split green chillies
- Salt to taste
- Water as required
Instructions:
Step 1: Marinate the Chicken
In a bowl, mix:
- Chicken (700g), ginger garlic paste (1 Tbsp), salt, red chilli powder (1 Tbsp), cumin powder (1/2 Tsp), and lemon juice (3/2 Tsp).
- Stir well and let it marinate for 30 minutes.
Step 2: Dry Roast the Spices
In a pan, dry roast the following spices for 2 minutes:
- Cumin seeds (1 Tsp)
- Cloves (6)
- Dry red chillies (4)
- Cardamoms (5)
- Black pepper (8)
- Cinnamon stick (1/2)
Once roasted, set them aside.
Step 3: Cooking
- Heat 1/4 cup mustard oil in a pan over medium heat.
- Add 2.5 chopped onions and sauté for 10-12 minutes until golden brown.
- Add 1 Tbsp ginger garlic paste and sauté for another minute.
- Add 1/2 Tsp turmeric powder, 1/2 Tsp fennel powder, 1.5 Tbsp Chukde Chicken curry masala, 2 Tsp Degi mirch, and 2 Tsp besan. Stir well.
- Pour in 450 ml tomato puree and add 4 split green chillies. Cook for 5 minutes.
- Add the dry roasted spices (from Step 2) and mix everything well.
- Cook the mixture for 10-15 minutes until oil separates from the masala.
- Add the marinated chicken and sauté on high heat for 4-5 minutes.
- Add water as required and close the lid. Cook for 1 whistle in a cooker.
