Litti Chokha is a classic dish from Bihar that feels filling, rustic, and full of smoky taste. Crispy wheat littis stuffed with spiced sattu are cooked slowly, then paired with mashed chokha made from roasted vegetables. You can make this easily at home with basic ingredients and a little patience.

Ingredients

For Chokha: Brinjal, tomato, garlic, green chili, onion, dhania leaves, mustard oil, salt

For Litti Stuffing: Sattu, onion, green chili, ginger, garlic, amchur powder, ajwain, kalonji, red chili powder, achaar masala, dhania, mustard oil, lemon juice, salt

For Dough: Wheat flour, ghee, salt, water

Good-quality spices make a clear difference. You can use spices from Chukde for cleaner taste and steady results.

How to Make Litti Chokha

Step 1: Roast vegetables: Roast brinjal, tomatoes, and garlic directly on an open flame till the skin chars and the inside turns soft. Peel and mash them well.

Step 2: Prepare chokha: Mix roasted brinjal and tomatoes with chopped onion, green chilies, garlic, mustard oil, dhania leaves, and salt. Keep it coarse.

Step 3: Make sattu filling: In a bowl, mix sattu, onion, green chilies, ginger, garlic, amchur powder, ajwain, kalonji, red chili powder, pickle masala, mustard oil, lemon juice, dhania, and salt. The mix should feel moist, not dry.

Step 4: Prepare dough: Mix wheat flour, ghee, salt, and water to make a soft dough. Rest it for 15 minutes.

Step 5: Shape litti: Take a small dough ball, flatten it, add 1–2 tablespoons of sattu filling, seal the edges, and shape into a round ball.

Step 6: Cook: Cook the littis on a heavy pan on low heat. Keep turning so they cook evenly and turn crisp outside.

Serve hot littis with chokha and a little ghee on top.
