Amchur is unripe green mango sliced and sun-dried. The spice is found as a whole or in powdered form. It is largely produced in India and Pakistan. In India, mango trees have been growing for over 4000 years. After Europe's explorations in the 16th & 17th centuries, mangoes have spread to most tropical and sub-tropical parts of the world.

Amchoor powder is chiefly used in Indian cuisine to flavour curries, soups, chutney, marinades, and as a condiment. It acts as a souring agent like tamarind and has the same tenderizing qualities as lemon or lime juice.
