Did you know that the soft and melt-in-the-mouth Galouti Kebab was first created for Nawab Asaf-ud-Daula of Lucknow? Due to his dental issues, he couldn’t chew hard foods, so his chef prepared this kebab for him.

These kebabs were originally made with meat, but today we’re making a vegetarian version using kidney beans. Let’s dive into this delicious recipe!

Ingredients:

Method:

  1. Start by making a paste from boiled kidney beans.
  2. In a mixer jar, add soaked cashews, fried onions, cardamom, green chili, and ginger-garlic paste. Grind them together.
  3. Mix the ground mixture with the kidney bean paste and add ghee, garam masala, salt, Chukde coriander powder, and red chili powder. Mix well.
  4. Add gram flour to the mixture to help bind it together.
  5. Shape the mixture into small kebabs or patties.
  6. Heat oil in a non-stick pan and shallow fry the kebabs until golden and crispy on both sides.
  7. Serve the hot kebabs with onion, green chutney, and any bread of your choice.

Tip: Adding Chukde coriander powder enhances the flavor of the kebabs and gives them a unique taste.
