Step-by-Step Method

Step 1: Prepare the Base: Heat oil in a heavy-bottomed handi. Add onions and fry until golden brown. Remove half the fried onions and keep aside for layering later.

Step 2: Add Whole Spices: To the remaining onions, add Chukde Cumin Seeds, Black Pepper, Green and Black Cardamoms, Bay Leaves, Cloves, and let them crackle for a few seconds.

Step 3: Cook the Chicken: Add ginger-garlic paste and splash a little water to prevent burning. Sauté until fragrant, then add chicken. Cook on medium flame for 5 minutes.

Step 4: Add Flavors: Mix in tomatoes, salt, and slit green chillies. Add Chukde Biryani Masala, stir well, and cook on low flame for 15 minutes until the oil separates.

Step 5: Add the Achari Twist: Add green chilli pickle and mix thoroughly. This gives the biryani its signature tangy flavor.

Step 6: Layer the Biryani: Spread soaked rice evenly over the chicken. Add water, salt, lemon slices, and a touch of food color. Cover tightly and cook on low heat (dum) for about 15 minutes.

Step 7: Final Touch: Sprinkle Kewra water and the reserved fried onions. Let it rest for 5 more minutes before serving.
