White Pepper is the spice produced from the berries of the pepper plant that also produces Black Pepper. Unlike Black Pepper where the unripe berries are picked and dried with the skin, White Pepper is made of fully ripe pepper berries, that are soaked in water for a few days and their skin is removed. This gives White Pepper a different flavor and heat component than Black Pepper.
White Pepper has an earthy and musty flavour, sharper in bite than Black Pepper.
White Pepper is often used as a replacement for black pepper for the visual appeal of the dish in western cooking. It's more commonly used in Asian cuisines like Chinese and Vietnamese. It's used in dishes like soups, chowders, mashed potatoes, and even stir-fries.
