  • Add Masala Powder: Add 1 to 2 tablespoons of Chukde Chhole Masala Powder to the sautéed mixture and roast it for 1-2 minutes on medium heat to release its aroma.
  • Add Chickpeas: Add the cooked chickpeas along with some water or chickpea cooking liquid to adjust the gravy consistency.

To make Punjabi Chhole Masala:

  1. Soak 1 cup chickpeas overnight. Pressure cook with salt, a tea bag, bay leaf, and black cardamom for 5–6 whistles.
  2. In a pan, heat oil, add cumin seeds, ginger, green chilies, then chopped onions. Sauté till golden.
  3. Add tomato puree and spices (saubt dhania, cumin, red chili, turmeric). Cook till oil separates.
  4. Add cooked chickpeas and simmer for 15–20 mins. Mash a few for thickness.
  5. Finish with garam masala, amchur, and kasuri methi. Garnish with coriander.

Serve hot with bhature or rice.
