1. Prepare the Mawa

  • Boil 1 liter of milk on medium heat until it thickens significantly.
  • In the remaining ½ liter of milk, add vinegar water to curdle it. Let it rest briefly, then strain to remove excess whey.
  • Mash the curdled milk gently until smooth, avoiding any lumps.

2. Combine Ingredients

  • Mix the mashed curdled milk with the thickened milk.
  • Add sugar and 1 tsp of chukde cardamom powder for flavor.
  • Stir continuously and cook on low heat, adding 1 tbsp ghee. Cook until the mixture leaves the sides of the pan.

3. Shape the Modaks

  • Grease a modak mold lightly with ghee.
  • Fill each mold with the prepared mawa mixture. Optionally, add flower petals or chopped pistachios for garnish.
  • Press gently and remove from the mold.
