If you’ve never cooked biryani before, try this Delhi-style Achari Chicken Dum Biryani and surprise your family. The spicy, tangy flavor from the green chilli pickle and the rich aroma of Chukde spices will make everyone wonder where you learned to cook like this.

Ingredients

Step-by-Step Method

Step 1: Prepare the Base: Heat oil in a heavy-bottomed handi. Add onions and fry until golden brown. Remove half the fried onions and keep aside for layering later.

Step 2: Add Whole Spices: To the remaining onions, add Chukde Cumin Seeds, Black Pepper, Green and Black Cardamoms, Bay Leaves, Cloves, and let them crackle for a few seconds.

Step 3: Cook the Chicken: Add ginger-garlic paste and splash a little water to prevent burning. Sauté until fragrant, then add chicken. Cook on medium flame for 5 minutes.

Step 4: Add Flavors: Mix in tomatoes, salt, and slit green chillies. Add Chukde Biryani Masala, stir well, and cook on low flame for 15 minutes until the oil separates.

Step 5: Add the Achari Twist: Add green chilli pickle and mix thoroughly. This gives the biryani its signature tangy flavor.

Step 6: Layer the Biryani: Spread soaked rice evenly over the chicken. Add water, salt, lemon slices, and a touch of food color. Cover tightly and cook on low heat (dum) for about 15 minutes.

Step 7: Final Touch: Sprinkle Kewra water and the reserved fried onions. Let it rest for 5 more minutes before serving.

Serve the piping hot Achari Chicken Dum Biryani with raita or salad and enjoy the delightful flavors of pure Delhi-style biryani.

FAQs

Q1: Can I use basmati rice instead of Golden Sella?

Yes, but soak basmati rice for only 30 minutes to avoid overcooking.

Q2: What makes it “Achari” Biryani?

The tangy flavor comes from adding green chilli pickle to the masala while cooking the chicken.

Q3: Can I prepare this biryani in a pressure cooker?

Yes, but for an authentic dum texture, it’s best cooked in a handi on low flame.

Q4: Can I replace chicken with mutton?

Absolutely. Just increase the cooking time for mutton by 20–25 minutes before layering with rice.

Q5: Which spices from Chukde are best for biryani?

Chukde Biryani Masala, Cumin Seeds, Black Peppercorns, and Bay Leaves give the best aroma and depth.
