Sabudana or tapioca pearl is the starch extracted from the roots of cassava plants and processed into pearl-like balls. Since it is all starch, Sabudana, also called Sago very commonly, is a pure carbohydrate and thus high in energy. It holds prominence in Indian culture as it is eaten during fasting in various forms, for the energy it provides.
Sabudana when soaked in water has a chewy texture but the starchy product has no taste of its own.
Raw Sabudana is white, which turns transparent when cooked. Sabudana is abundantly used as fasting food. A variety of dishes like khichdi, kheer, papad, tikki, and vada are made from it.
