Step-by-Step Instructions

  1. Prepare Hung Curd: Tie yogurt in a cheesecloth and hang for 3–6 hours to remove whey. Greek yogurt can be used to save time.
  2. Make Mango Puree: Peel and blend mangoes into a smooth puree. Optionally, lightly heat for 3–4 minutes to thicken.
  3. Flavor Base: Bloom saffron in warm milk. Pound cardamom pods or use ¼ tsp store-bought powder. Mix sugar into mango puree for consistent sweetness.
  4. Combine Ingredients: Whisk hung curd until smooth. Fold in mango puree, saffron milk, and cardamom. Add nuts and fresh mango cubes as garnish.
  5.     Chill & Serve: Refrigerate for 1–2 hours. Serve with poori, roti, or as a chilled summer dessert.
