Crispy Soya Cheese Balls Recipe | Cheesy & Crunchy Evening Snack
Evening tea often needs something better than regular pakoras. Soya chunks absorb spices well and make a filling base. Stuff them with cheese, coat properly, and finish with the right spices to get crispy soya cheese balls—crunchy outside and soft inside.

Mixture
- 1 cup dry soya chunks (80–90 g)
- 1 medium boiled potato, mashed

- 1 tsp ginger-garlic paste
- 2 green chillies, chopped
- 1 tsp Chukde Kashmiri red chilli powder
- ½ tsp garam masala
- ½ tsp chat masala
- 2 tbsp chopped coriander leaves
- 2 tbsp besan or corn flour
- Salt to taste
Stuffing – 50–60 g mozzarella or processed cheese, cubed
Coating – Flour slurry + fresh bread crumbs
Cooking – Oil for deep frying or light brushing for air frying
Step-by-Step Method
1. Prepare soya chunks
Boil water, soak soya chunks for 10–12 minutes. Drain, rinse, and squeeze firmly until no water remains. Pulse briefly in a mixer to make them coarse.
2. Make the mixture
Mix ground soya, mashed potato, paneer, onion, green chillies, ginger-garlic paste, Kashmiri chilli powder, garam masala, chat masala, coriander, besan and salt. Rest in the fridge for 15 minutes.
3. Stuff and shape
Flatten a lemon-sized portion, place a cheese cube in the centre, seal tightly and roll into a ball.
4. Coat
Dip in flour slurry, roll in bread crumbs. For extra crunch, double-coat. Rest 10 minutes in the fridge.
5. Cook
Deep fry: Medium-hot oil. Fry 4–5 balls at a time until golden and crisp.
Air fry: 180 °C for 8 minutes, turn, then 5–6 minutes more. Brush lightly with oil.
Serve hot with ketchup or green chutney.
