Ingredients:

For Tempering:

  • 2 tbsp desi ghee
  • 1 tsp mustard seeds
  • 4-5 curry leaves
  • 2 dry red chilies

Method:

  1. Prepare the Tempering: Heat oil in a pan. Add mustard seeds, cumin seeds, fenugreek seeds, curry leaves, and green chilies. Sauté for a minute. Add chopped onions and cook until soft.
  2. Cook Tomatoes & Veggies: Add chopped tomatoes and cook until soft. Then, add chopped vegetables (brinjal, gourd, carrot, pumpkin) and mix well. Cover and cook for 7-8 minutes.
  3. Add Spices: Add turmeric powder, red chili powder, and Chukde Sambhar Masala Powder. Mix well and cook for another 2 minutes.
  4. Combine Lentils & Water: Add cooked lentils and water to the mixture. Stir in tamarind water and jaggery. Let the sambhar cook on medium heat for 10-12 minutes.
  5. Final Tempering: In a small pan, heat desi ghee and add mustard seeds, curry leaves, and dry red chilies. Pour this tempering into the sambhar. Garnish with fresh coriander leaves.

Serving Suggestion: Serve the hot, spicy sambhar with crispy idli, dosa, or medu vada. You can also enjoy it with steamed rice for a complete meal.
