Origin

Monosodium Glutamate or MSG is the Sodium salt of Glutamic acid. While it occurs naturally in few foods like tomato and cheese, it can be produced by three methods – hydrolysis of vegetable proteins with hydrochloric acid, direct chemical synthesis with acrylonitrile, and bacteria fermentation. MSG was discovered by a Japanese chemist named Kikunae Ikeda who extracted it from seaweed that had flavour enhancing properties.

Flavour Profile

MSG has an umami flavour which is a unique broth-like savoury flavour, different from the four basic tastes — sweet, sour, salty, and bitter.

Cooking Uses

MSG is used to enhance the flavour of the food and is commonly used in seasonings, canned soups, dressings, Chinese preparations, and processed snacks. It balances the sweet and sour flavour and cancels out bitter flavour from dishes.
